Mr. Muffin representative, Rachel Levy, shares the basics on baking soft, fluffy or simply perfect muffins. "In order to bake moist and soft muffins, the key is to combine all the dry ingredients and extras first such as blueberries by stirring them in a large mixing bowl. Make a well with the flour mixture. The liquid ingredients should then be combined and poured into the well," Levy starts.
Surprisingly, the key to avoid dense muffins is not to overmix them.
"Stir the mixture of dry and liquid ingredients, counting up to a maximum of 15 strokes. By this time, your batter should still be lumpy. Lightly grease your muffin cups and fill them up to 2/3 full for rounded muffins," Levy says.
Levy also shared some little tips to make the perfect muffins including greasing the bottom until halfway up on the sides in order to get perfectly rounded muffins. Tunnels in muffins or rough muffins are created when the batter is overmixed.
"You should also follow recipe instructions in filling the muffin cups. When using muffin pans and when there is not enough batter to fill all the pans, fill the empty cups with water prior to baking them to serve as protection for the silicone surface," Levy adds.
Levy also suggests placing the muffin cups or pans in the preheated oven as soon as ready. Batters that use baking soda or powder have to be baked right away to prevent the leavening power from being lost.
Lastly, in order to avoid making muffins that are soggy, allow the pans to cool as instructed in the recipe.
