Levy shares that mixing dry ingredients first then combining the liquid ingredients without over-mixing will make moist and tender muffins. "In separate bowls, mix dry ingredients and liquid ingredients. Create a well on the dry ingredients where you will pour the liquid ingredients. Just stir to moisten dry ingredients but do not over-mix. Stir only up to 15 strokes and the batter should be lumpy by this time."
The baking cups should be arranged on a metal baking sheet for extra support. The baking cups should be lightly greased and can also be lined with aluminum or paper liners. Fill the cup only up to 2/3 full for well rounded muffins.
Ensure that the oven is preheated prior to placing the muffin cups. If using baking soda or baking powder, muffins must be baked directly to guarantee that the leavening power will not lose its effect.
To prevent muffins from becoming soggy, allow the cups to cool down according to the instructions. If muffins are to be stored, allow them to cool completely and place them in a sealed plastic bag. Refrigerate the muffins for a week or freeze for up to 3 months. If planning to freeze the muffins, wrap them in heavy foil or place in freezer bags.
